BIKO – SWEET COCONUT RICE

A delicious Snack or Dessert

Prep. Time:  5 minutes (+ rice cooking time)
Cooking Time: 20 minutes

Ingredients:  

2 c. sweet rice
1 can coconut milk
¾ c. sugar
½ tsp. anise seeds


LOLA'S BIKO MEMORY:  "When I was a child at school during recess they would sell the biko for one (1) centavo and put the dukot (burned or leftover rice) on the top for a decoration."


1.    Cook sweet rice with not much water in rice cooker.
 


2.    On stove in saucepan, boil heat coconut milk on medium until it is reduced by half. 






3.    Stir in sugar and anise seeds, reduce until thick on the spoon. 



4.    Rice will be drier than regular rice.  Then mix rice into milk mixture until sticky, not runny. 



 5.    Keep stirring so it does not become dukot (burned or leftover rice), however, if it does become dukot, it will still be good. 


 
6.    When rice is sticky remove from pan and serve.
